Stir Fried Tomato Eggs

Have you ever answered this question, '' Whether eggs came first or the chicken?'' Super easy and tasty Stir Fried Tomato eggs, can fix any meal of your day in no time. In breakfast, serve it with some toasted bread or in dinner, just serve it with a bowl of steamed rice and you will prepare one of the  most delicious meal of the day. This recipe I discovered when I visited one of my Chinese friend. They invited us over a lunch. And to my surprise the menu was totally different than what I imagined about the Chinese cuisine. So today's recipe is inspired from the fried eggs and tomatoes which she mentioned me then.

My daughter loves eating eggs, and every single day she wants at least one. With regular eggs recipes, I try to experiment something new and exciting which is healthy also. And this time I served her these egg dish too, and to my surprise she loved it. It has got tomatoes, which made the eggs extra soft and juicy. There are many ways of preparing this dish and honestly speaking, the native people will prepare this dish more perfectly than I. But still I tried this dish my own way, and to my surprise came out pretty good. Now traditionally, the tomatoes which are used in the recipe are without skin. That means, they blanch the tomatoes first, and then peal the skin off. They do it this way because, by blanching the tomatoes, the sourness of the tomatoes are reduced thus making it a bit sweeter in taste. 

In this recipe today I have slightly scrambled  4 egg in the heated pan. Removed it from the pan. In the same pan then I added some chopped spring onion greens and tomato wedges. Added salt and pepper and sauteed it for a while. When the tomatoes were little soft, then I again transferred the eggs back into the pan and cooked every thing together. And that's it. Your stir fried Tomato eggs are ready.Step by step detailed recipe as follows:-

                 Preparation Time:-5 minutes  Cooking Time:-10 minutes     
Total Time:- 15 minutes
No of Servings:- 2-3 persons

1 cup = 250 ml 
¾ cup = 200 ml
½ cup = 125 ml 
1/3 cup = 80 ml
1 tablespoon = 15 ml
1 teaspoon = 5 ml
½ teaspoon = 2.5 ml
¼ teaspoon = 1.25 ml

* Eggs:- 4 no.
* Tomatoes:- 4 medium , cut into wedges
* Spring Onion:- 1/2 cup, roughly chopped+  for garnishing
* Salt:- to taste
* Black Pepper Powder:- 1/4 teaspoon
* Vegetable Oil:- 2 + 1 tablespoon, (quantity used is little more than in any other recipe.)

* Crack eggs into a small bowl. Beat the eggs with a fork. Then heat 2 tablespoon of vegetable oil in frying pan over high heat. Once oil is hot, pour in the beaten eggs and stir quickly. Its will be scrambled, continue to cook until eggs are cooked completely but not overcooked. Transfer it to a plate and keep aside. Refer to notes below.

* In the same pan, add the other 1 tablespoon of vegetable oil and heat the pan. Add the spring onions and tomato wedges. Cook for 2 minutes over high heat. The tomatoes should not be mushy. 

* Once cooked, add salt and pepper to the pan. Transfer the eggs into the pan and fry with the tomatoes again for 1 minute. And that it, your stir fried tomato eggs the ready to be served. Garnish it with spring onions greens and serve immediately.

* The eggs show not be over fried as it contains protein which due to which it become hard and chewy.

* For Vegetarian and Vegans, you can replace eggs with paneer (Indian cottage cheese) or tofu respectively.

Serving Tips:- In breakfast serve with toasted break and for lunch or dinner serve with steamed rice or just boiled noodles.
