It's holiday season again and Christmas is around the corner, so with festive season, its also the season for lots of baking. Those who have still not baked this year's Christmas cake, this recipe is for them. Now for traditional Christmas cake you have to get started weeks before by soaking your dried fruits in an alcohol. And if non- alcoholic then dried fruits are soaked in orange juice. But in this recipe there is no soaking before hand.This is not the traditional one but taste so good just like the traditional one. So you can say that, this is the more quicker version unlike the traditional one. This is my non alcoholic version of Christmas Fruit Cake. Those who are looking for last minute recipe, this is perfect for them.




This cake is full of nuts and dried fruits. The amount of nuts is completely according to personal preference. I like with less dried fruits and nuts.  The dried fruits can be any thing what ever you like.I have used glacéed pitted cherries, raisins and chopped , dried oranges, lemons and cranberries.Traditionally, after baking the cake, you have to feed the cake with any type of alcohol for atleast 2 weeks before consuming it.  The 'Old Fashioned Way',  is definitely worth waiting but this one made my life much more easier and simpler. In my recipe, I have omitted all these steps. After lots of trails and errors, I present to you my non alcoholic version of fruit cake. It is so tasty and rich in flavours that it is not constraint to holidays only. Rather you can prepare it at any time of the year.

This cake is divided into 3 easy steps. 1 step involves in soaking and boiling the dried fruits in the wet ingredients, 2 step involves in combining all the dried ingredients in the wet ingredients and 3 step is to bake the cake. The cake tastes best when it is left 6-7 hours or overnight before consuming. The dried fruits released all it flavours in the cake leaving the cake soft and moist.

The complete recipe is as follows:-





Prep Time:- 25 minutes   Baking Time:-1 hour 
Standing Time:- 8 hours Total Time:- 9 hours 25 minutes

Total Serving:- 8-12 persons



Measurement:-
1 cup = 250 ml 
¾ cup = 200 ml
½ cup = 125 ml 
1/3 cup = 80 ml
1 tablespoon = 15 ml
1 teaspoon = 5 ml
½ teaspoon = 2.5 ml
¼ teaspoon = 1.25 ml

Ingredients:-
* Plain Flour:- 1 1/2 cups
* Chocolate Powder:- 1/2 cup
* Mixed Dried Fruits:- 2 cups
* Orange Juice:- 1/2 cup
* Maple Syrup:- 1/ cup
* Lemon Juice:- 1 tablespoon
* Unsalted Butter:- 175 grams
* Brown Sugar:- 1 cup
* Cinnamon Powder:- 1/2 teaspoon
* Dried Ginger Powder:- 1/4 teaspoon
* Vanilla extract:- 1 teaspoon
* Eggs:- 2 
* Baking Powder:- 1/2 teaspoon
* Baking Soda:- 1/4 teaspoon
* Salt:- 1/2 teaspoon

Method:-
1. In a large pot, add mixed dried fruits, orange juice, lemon juice, maple syrup,unsalted butter, brown sugar and vanilla extract and bring it to boil. Stir occasionally. Simmer over low heat for 10 minutes. Turn off the heat and let it cool for 30 minutes, until lukewarm to touch. ( Refer to notes.)






2. Combine plain flour, chocolate powder, ginger powder, cinnamon powder, baking powder, baking soda and salt in a bowl. Add all the wet ingredients into the flour. Fold until the flour disappear into the batter. Do not over mix.






3. Lightly whisk 2 eggs and add to the batter. Mix well.



4. Transfer all the batter to a lightly greased 9 inch pan. Line it around the sides and base with butter paper. Bake  it in a preheated oven at 170 degree Celsius for 1 hour. The skewer inserted should come out clean. ( Every oven is different so bake according.)





5. Remove it from the oven and set it cool on the wire rack. Once cooled down, cover it with the cling wrap. For best results consume after 6 to 8 hours.

Notes:-
* You can use alcohol instead of orange juice.  Any sort of rum or brandy can be used in this recipe.

* If you do not have maple syrup, you can use honey also.

* Oil can be used instead of butter if you want to make little lighter.

Serving Tip:- Can be served after dinner or lunch parties.
