Rustic Quick Chicken Curry




Today's recipe is a  Rustic Quick Chicken Curry or you can call is as A chicken Curry in a hurry. The easiest yet tasty curry you will come across. With very fewer ingredients this chicken curry is super delicious. It is the most rustic and authentic quick chicken curry. You just marinate the chicken with all the spices and cook it and it is done.  It is a perfect recipe for boring weekdays where you don't want to spend much time in the kitchen and yet want to eat something tasty and delicious. 

In this recipe, I have marinated the chicken pieces in yoghurt, turmeric powder, hot chilli powder, ginger and garlic paste and ajwain seeds. This is the one secret ingredient in this recipe which will give that rustic flavour to the dish.  I have used finely chopped onions and cooked it with the chicken. The taste of this chicken has a distinct flavour of caraway seeds which stay fresh in your mind. 



So here is my recipe for quick chicken curry.

Preparation Time:- 10 minutes  Standing Time:- 1hr + 10 minutes  CookingTime:- 30 minutes  Total Time:- 1 hr 50 minutes

Number of Servings:- 3-4 persons
Measurements:-
1 cup = 250 ml
½ cup = 125ml
1 tablespoon = 15 ml
1 teaspoon = 5 ml
½ teaspoon = 2.5 ml
¼ teaspoon = 1.25 ml

Ingredients:-
* Chicken on bone:- 1 kg (I have used leg pieces and thigh pieces)
* Onions:- 2 large (finely chopped)
* Tomatoes:- 1-2 medium (roughly chopped)
* Ginger Paste:- 1 tablespoon
* Garlic Paste:- 1 tablespoon
* Green Chillies:- 2 - 3
* Yoghurt:- ½ cup
* Tomato Puree:- ½ cup
* Turmeric Powder:- ½ teaspoon
* Chilli Powder:- ½ teaspoon
* Garam Masala Powder:- ½ teaspoon
* Ajwain/Carom Seeds/Caraway Seeds:- ¼ teaspoon
* Whole Black Pepper:- 1 tablespoon
* Whole Black Pepper:- 1 tablespoon
* Whole Red Chillies:- 2-3
* Salt:- to taste
* Vegetable Oil:- 3 tablespoon
* Water:- 1½ - 2 cups

Method:-
1. Wash and clean the chicken pieces. Keep it in a large bowl. Now add yoghurt, turmeric powder, red chilli powder, ajwain/ caraway seeds, ginger and garlic paste to the chicken. Give it a good Mix. Marinate it and keep aside for at least 1 hour (30 minutes will also do.)



2.  Now heat oil in a pan, add whole red chillies and whole black pepper to it. Saute for 30 seconds. Add the chopped onions and cook for 2 minutes or till translucent over a medium heat.




3. Add the chicken pieces to the pan. Toss the chicken for 5 - 7 minutes over a high heat. Now add salt to taste and 1½ cup of water to the pan. Mix well, cover and cook for 15 minutes or till all the water is evaporated, over medium-high heat.






4. After 15 minutes, open the lid of the pan and add tomato puree, diced tomatoes,  Cook till the tomatoes are fully cooked and mushy. Now add green chillies and garam masala powder to the pan. Toss it well, cover and cook for another 5 minutes. (At this point you can ½cup off more water if your chicken goes too dry.)




5. After 5 minutes, open the lid of the pan, mix everything nicely. Check for season. At this point, cover it again and switch off the flame. Give a standing time of 10 minutes.



6. After 10 minutes it is ready to be served.





Note:-
* People living outside India, and not aware of all the Indian spices, and caraway/carom seeds, you will mostly get all the spices in the Indian stores near your place. 

Serving Tip:-  Serve this rustic quick chicken curry with steamed rice.
