Cream Chicken




Today's recipe is Cream Chicken or Malai Chicken. It is a perfect starter recipe for any parties and get together. It is a rich starter recipe to satisfy your evening hunger. In India, there are many ways of making this recipe. Many people make it in charcoal gas, griller, oven and on a gas top. Today the recipe with I am sharing is a simple version of cream chicken. It is made on gas top. Super easy yet full of flavours.

In this recipe, I have done two marinations. In the 1st marinate, I have used lime juice, ginger garlic, chilli paste and meat tenderizer (optional). Massaged well and kept it for an hour. For 2nd marinate I have used yoghurt, cream cheese, fresh cream, mustard paste and Indian spices. Then cooked it over the gas stove. In the end, I have finished it off with pouring some melted butter over the cooked chicken before serving.

Preparation Time:- 10 minutes   Standing Time:- 1 hr 30 minutes   Cooking Time:- 20 minutes    Total Time:- 2 hours

No of Servings:- 3-4 persons

Measurements:-
1 cup = 250 ml
½ cup = 125ml
1/3 cup = 80 ml
1 tablespoon = 15 ml
1 teaspoon = 5 ml
½ teaspoon = 2.5 ml
¼ teaspoon = 1.25 ml

Ingredients:-
* Boneless Chicken:- 600 grams (Cut into medium size cubes)
* Yoghurt:- 1/3 cup
* Cream Cheese:- ½ cup
* Fresh Cream:- 1/3 cup
* Mustard Paste:- 1 tablespoon
* Ginger Garlic Paste:- 1 ½ tablespoon
* Coriander leaves and Green Chilli Paste:- 2 tablespoon ( I have used 2 hot red chillies)
* White Pepper Powder:- ¼ teaspoon
* Black Pepper Powder:- ½ teaspoon
* Ajwain ( Caraway Seeds/ Carom Seeds):- ¼ teaspoon
* All Purpose Flour (Maida):- 1 tablespoon
* Salt:- to taste
* Lime Juice:-1 teaspoon
* Chilli Oil:- 1 + 1 tablespoon ( If you don't have you can use any vegetable oil)
* Melted Butter:- 2 tablespoon
* Meat Tenderizer:- ¼ teaspoon (optional, if you want to avoid, you can do so.)


Methods:-
1. Take a large bowl, add chicken pieces, ginger garlic paste, coriander, green chilli paste, lime juice and meat tenderizer to it. Mix well. Keep aside for an hour.





2. Now take another bowl, add yoghurt, cream cheese, fresh cream, white pepper powder, black pepper powder, mustard paste,  1 tablespoon of chilli oil, ajwain seeds, salt and all-purpose flour to it. Beat well all the ingredients till no lumps are seen. It should be a smooth paste.





3. Add this paste to the marinated chicken, incorporate well. Keep aside for another 30 minutes.




4. Now heat a heavy bottom frying pan. Add 1 tablespoon of chilli oil and the chicken pieces along with all the paste. Cook for 5 minutes over high heat. Stir in between. 




5. After 5 minutes turn the flame to low and cook for 10 minutes. Do not over the pan. When the chicken is almost cooked and the gravy has dried up at that time increase the flame to high and cook for last 5 minutes. Switch off the flame.






6. Now melt some butter and keep aside. Serve the chicken in a serving dish. Now pour the melted butter over the cream chicken.





 Serve Hot.

Note:-
* People living outside India, and not aware of all the Indian spices, you will mostly get all the spices in the Indian stores near your place. 

* If you want to keep little gravy to can add more cream at the time of last 5 minutes of cooking.




Serving Tip:- Serve Cream Chicken as a starter with mocktails and cocktails or in man course with roti or paratha.
