Indian Pav (Dinner Rolls)


Today I am sharing my version of Indian Pav or Bread Rolls or Dinner Rolls or Buns. There are many ways of making Indian Pav. Generally, in India, Bread, and Pav are made without eggs as many people choose to be vegan. Pav bread is generally eaten with bhaji (spicy mix vegetables which are mashed and cooked on a high flame), Andaa Burji (Scrambled eggs prepared with Indian spices) or Minced meat gravy. In a country like India, bread hardly played any role in our society except Christian community earlier. But later it was accepted by rest of the people also.  
 Pav is similar to a bun. Like bun, it is round in shape but small in size. Pav can be in rectangular shape also. The main difference between Pav bread and a bun is their shape. The pav which we get in Maharashtra region of Indian is rectangular in shape.
I am using eggs in this recipe as I personally feel that it adds a distinct flavour and texture to the Pav. I will shape the pav making it a knot. I will take a little portion of the dough, roll it into a cylinder and then coil it giving it a knot shape. You can also make it into small balls instead of giving a knot shape. So here is the recipe for my version of Pav or dinner rolls:-




Preparation Time:-30 minutes  Standing Time:-2 1/2 hours  Preparation Time:- 18 - 20 minutes  Total Time:- 3 hours 25 minutes

Number of Servings:- 3 - 4 persons

Measurements:- 

1 cups = 250 ml
1 tablespoon = 15 ml
1 teaspoon = 5 ml
Ingredients-
1. All-purpose Flour:- 1 1/2 cups + 1/2 cup for dusting
2. Oil:- 3 tablespoon
3. Milk:- 1/2 cup + 1/4 cup for brushing on top of the Pav
4. Egg:- 1
5. Dry Yeast:- 7 grams /1 packet / 2 teaspoon
6. Sugar:- 1tablespoon
7. Salt:- 1/2 teaspoon
Method:-
1) Melt the butter in a large pan. Once melted, switch off the flame. To that add milk, sugar, salt, and egg. Mix well so that everything is combined and sugar and salt are dissolved. Add the dry yeast and let it sit for a minute or two. Add 1 1/2 cups of flour to it. 


2) Mix well with the help of any spoon for 1 min till everything is combined well. The dough will be sticky. Cover the pot and let the dough rise for 1 hour till it doubles in size.


3) After one hour, knead the dough for 2-3 minutes with your hands. Deflate it. Then cover it again and let it sit for another 30 minutes.

 

4) Again deflate and knead the dough for 2-3 minutes and make it into a smooth dough. Take the dough out on a flat surface and dust the dough with the remaining 1/4 cup flour to divide it into 6 equal portions. Take one portion of a dough rolls it into a cylinder. Then coil it holding one side of the cylinder inwards giving a knot shape. Make all of them in a similar way. Arrange them in a nonstick pan. Leave some space between the doughs so that they can expand well.




5) Cover the pav rolls and let it rise for the last 1 hour before baking them. Preheat the oven to 180 degrees Celsius or 350 degrees Fahrenheit for 10 minutes. Brush the dough with milk gently before placing them into the oven. 


6) Place them in the oven and bake them for 18- 20 minutes. (Every oven is different so the baking time may differ.) Bake till the top crust is light golden in colour.
7) Remove it from the oven, brush it with melted butter and serve hot.
Note:-
* You can use butter instead of oil.
* Instead of milk wash, you can give egg white wash also.
Serving Tip:- 
*Serve hot with bhaji, andaa bhurji, wadas, keema curry (minced meat gravy), butter or jam.
