Spread the Joy of Cooking...!

Easter holidays are on and what can be better than some baking. And my little one is fond of baking so I thought of including her in preparing today's recipe. This recipe is so easy that even you can include your kids in baking and spend some quality time with them. Today's recipe is Choco- Banana muffins. And this recipe is my personal favorite as it requires only one mixing bowl to do the complete task. That means no messy utensils and too many spatulas.

It's so moist and decadent that if you make it once you will make it again and again. These super easy bakery style muffins are a sweet treat who loves eating bananas.  Its perfect for your your little one who loves eating cupcakes and muffins. It has banana in it, thus making it much more healthier. It can be served in your children breakfast or pack in their lunch boxes. My daughter loves to eat muffins and so I decided to include some healthy ingredients into it.

It is so much easy way to include some healthy food in your kids diet this way. There are many ways and variety of making these muffins. Many people like to use butter in this recipe as it gives very rich taste. But I like to use vegetable oil instead of butter. Oil keeps the muffins moist for a long time.

This recipe is the easiest yet tasty recipe I came across. This is a one pot recipe, that means I have mixed every thing in this one bowl, transferred them to the muffin tray and baked it. No mixing of the dry ingredients and wet ingredients separately. And you will get your muffins. No hand-machines or stand machine is needed for this recipe. Only hand whisk will do your job.

So here is my recipe just grab it.

                           Preparation Time:-15 minutes  Standing Time:- 10 minutes                                     Baking Time:- 20 minutes     Total Time:- 45 minutes
No of Servings:- 12 pieces

Measurements:-
1 cup = 250 ml
¾ cup = 200 ml
½ cup = 125 ml
1/3 cup = 80 ml
1 tablespoon = 15 ml
1 teaspoon = 5 ml
½ teaspoon = 2.5 ml
¼ teaspoon = 1.25 ml

Ingredients:-
* Bananas:- 2 large, ripe
* All purpose flour:- 1 3/4 cups

* Egg:- 1 large, at room temperature
* Milk:- 1/2 cup

Method:-
* Preheat your oven to 180 degrees Celsius. In a large mixing bowl take 2 bananas and mash it up with the back of a fork until only very small lumps remains.

* Add vanilla extract, an egg and sugar in it.Whisk well until every thing is combined well. Now add oil and stir again. With the help of a spatula, add the cocoa powder in the mixing bowl. Mix until the cocoa powder is completely incorporated.

*Add in salt, all purpose flour and baking soda to the batter. Stir in until just to combine. Scrap it from all sides with the help of a spatula. (Do not over mix the batter as the muffins will come out chewy.) Add milk to the batter and stir it gently until it incorporates completely.

* Divide the batter into 12 paper lined muffin tray, fill it to 3/4 part only. Bake for 15-17 minutes or until the muffin top looks set and skewer inserted into the center of the muffins comes out clean. Take it out from the oven and leave it in the muffin tin itself for 10 minutes before serving.

Note:-
* If you want to add some chocolate chips go ahead. It tastes even better.

* If you do not have muffin tray you can bake it as a simple banana cake also. However, the timing for baking will increase. In that case you have to bake around 35- 40 minutes.

* Every oven is different so bake according. My oven took 15 minutes to bake completely.

Serving Tip:- As in breakfast or in evening snacks with a cup of hot chocolate.
