Chocolate Muffins


Today's recipe is Chocolate chip muffins. It's so moist and decadent that if you make it once you will make it again and again. Its perfect for your birthday parties and kitty parties. My daughter loves to eat muffins and this one is her favourite of all. There are many ways and variety of making chocolate muffins. Many people like to use butter in this recipe as it gives very rich taste. But I like to use vegetable oil instead of butter. Oil keeps the muffins moist for a long time.

This recipe is the easiest yet tasty recipe I came across. In this recipe, you have to mix the dry ingredients and wet ingredients separately. Then combine both together. Fill the batter in the muffin tray and bake it. And you will ge
t your muffins. No hand-machines or stand machine is needed for this recipe. Only hand whisk will do your job.

My complete written recipe as follows:-



                           Preparation Time:-15 minutes  Standing Time:- 10 minute                         Baking Time:- 20 minutes     Total Time:- 45 minutes

No of Servings:- 12 pieces

Measurements:-
1 cup = 250 ml
½ cup = 125ml
1/3 cup = 80 ml
3/4 cup = 205ml
1 tablespoon = 15 ml
1 teaspoon = 5 ml
½ teaspoon = 2.5 ml
¼ teaspoon = 1.25 ml

Ingredients:-
* All Purpose Flour:- 1 cup
* Cocoa Powder:- 1/3 cup
* Sugar:- 3/4 cup
* Salt:- less than ¼ teaspoon (a pinch of)
* Baking Powder:- ½ teaspoon
* Baking Soda:- ¼ teaspoon
* Choco chips:- ½ cup
* Vegetable Oil:- ½ cup
* Eggs:- 2 ( At room temperature)
* Cream Cheese:- ½ cup (Philadephia)
* Vanilla Extract:- 1 teaspoon

Method:-

1.  Preheat the oven to 180° Celsius or 356° Fahrenheit for 10 minutes. Grease the baking tray with some oil or oil spray and line it with cupcakes sheets. Keep aside.

2. Take a mixing bowl and add all-purpose flour, sugar, cocoa powder, salt, baking powder, baking soda and choco chips to it. Mix all the dry ingredients thoroughly. Keep aside.



  
3. Take another mixing bowl add oil, eggs, cream cheese and vanilla extract. Whisk well so that no lumps and there and it's a smooth batter. It will take 2 - 3 minutes.






4. Now add all the dry ingredients to the wet ingredients in 3 batches. Incorporate well everything. Do not over mix as the muffins will come out hard and chewy.





5. Now fill the batter in the muffin cups with a help of a spoon or piping bag. Fill up to 3/4 level. (It should get some space to expand). Tap the tray to release all the air bubble. Now place the tray in the preheated oven and bake at 180° Celsius or 356° Fahrenheit for 20 minutes. Check the cake by inserting a skewer, if it comes out clean that means it's done and if the batter sticks to the skewer then you have to cook till it comes out clean. (Every oven is different so bake accordingly. My oven took 20 minutes for baking the muffins.)





6. When the muffins are done, take out of the oven and let it cool in the tray itself for 10 minutes. When the temperature comes out then it is ready to be served.




Serving Tip:- Serve these muffins in breakfast with coffee or in the evening as a snack
